This is my favorite recipe for banana muffins.
Make with or without the chocolate chips.
1/2 cup butter or margarine, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 eggs
1 1/2 cups mashed ripe bananas (about 3 large)
3 teaspoons vanilla extract
2 cup flour
1 cup chopped walnuts (optional)
1 cup (6oz) chocolate chips (I like dark - but only use 1/2 cup)
In a mixing bowl, cream butter and sugars. Beat in eggs, banana and vanilla.
Combine flour and baking soda; add to creamed mixture just until combined.
Stir in walnuts and choco chips.
Fill greased or paper-lined muffin cups half full.
Bake at 350 degrees for 15-20 minutes, until a toothpick comes out clean.
Cool for 5 minutes before removing from pan to wire racks.
Yield: 2 dozen.
